Whether steel, stone, or electric, a knife sharpening instrument is a must in the kitchen. Knives need to be sharpened on a regular basis for free-flowing movement while chopping, filleting, dicing or slicing. A dull knife inhibits one’s ability to even conduct the simplest of tasks, slows you down, and actually gives you more opportunities to cut yourself.
A steel sharpener is made of chromed steel or ceramic, removes small burrs and brings back the edge to the blade. Hold your knife at a 20-degree angle, and gently stroke the edge against the steel alternating the sides of the blade. Whetstones or stones are available in both hard (fine) and soft (coarse) abrasions, natural or composite. These require the use of water or honing oil to retain a scum-free surface and keep from obstructing surface pores. Stones require more skill when working them into the blade and one must find that right angle. Natural fine stones are able to sharpen and polish the edge simultaneously. Electric sharpeners, like those made by Chef’s Choice, have diamond coated abrasive discs and fine wheels to polish, either by a three-step or two-step process, depending on the model selected. There are also pocket-sized and tabletop manual models available featuring ceramic, steel or diamond abrasives. All items may be purchased wherever kitchen tools and knives are sold.
