Where There's Fire...There Should Be Smoke Print E-mail
It’s grill season, and with more than 3 billion barbecues being fired up every year in this country, it’s no surprise that more and more Americans are looking to expand their outdoor cooking skills. One of the best – and easiest – ways to add creative flair to recipes is with flavored smoke.  The aroma wafting from your barbecue grill will make you the envy of the entire neighborhood. While hickory and mesquite remain the two most popular flavors of wood for adding smoke-kissed flavor to foods prepared on the barbecue, other, more intriguing products are ready to add another dimension to smoke cooking.  BBQr’s Delight is offering outdoor chefs a line of all natural smoking wood pellets – in 12 flavors.            “It is the first product of its kind on the market,” says Candy Weaver, spokesperson for BBQr’s Delight and smoke cooking expert.  “We wanted to make it easy and fun for backyard barbecuers to really learn how to smoke cook like the blue ribbon competition pitmasters do.”  Weaver says that the smoke flavor produced from pellets imbues food with such subtle , but distinct, flavor that it elevates even novice outdoor chefs into the master barbecuer category.  No matter what type of grill you have you can use these smoking wood pellets because they’re equally compatible with gas, charcoal or electric grills or smokers.            Smoking wood pellets are made from wood that has been sterilized and has had its moisture content reduced, resulting in a consistent, clean and reliable flavoring agent.  In the process, all of that within the cellular structure of the wood is removed, thus concentrating the wood into a very dense form.            It’s more convenient and more efficient to use flavoring smoke wood pellets for outdoor cooking than using traditional wood products.  Only about one-third cup pellets are required for most grilling or smoking occasions, and perhaps best of all, they require no soaking so you need not remember to prepare them in advance as with wood chips.  “Pellets give you a more intense smoke, and they begin smoking faster than traditional chips or chunks,” says Weaver, “ so put the packet on the grill just when you place the food on to cook.  And if you were using wood chips, you have to use 5 to 10 times the weight of the pellets in order to get the same smoke intensity.”

            Unlike other wood products, wood smoke pellets should be wrapped in a foil pouch for maximum smoke use.  Just fold a 6-inch by 12 inch piece of heavy-duty aluminum foil into a square that’s sealed on three sides, fill the pouch with 1/3 cup of pellets, and seal the fourth side.  Punch one small hole in one side of the pouch and, when ready to start cooking, place it with the hole side up, on or above the heat source in a closed grill.  It is important to ensure with that the hole is tiny because the pellets burn most effectively in the absence of oxygen.  The smoke will last from 45 to 60 minutes, depending on how hot the fire is.
