There are as many recipes and types of BBQ as there are snow flakes, each with flavor and processes routed in tradition. Many involve long marinating times and very slow cooking. This is one of my favorite quick cheap and easy recipes. You may substitute pork chops for the chicken if you prefer. There are hundred of BBQ sauce recipes as well as store bought varieties. Serving Size: 4 Amount Measure Ingredient Preparation Method-------- ------------ ----------------- --------------- 4 chicken breast halves without skin -- cleaned 1 teaspoon ground cumin 1 teaspoon garlic powder 2 tablespoons lime juice 2 tablespoons olive oil salt and pepper -- to taste 1 cup your favorite barbecue sauce Place chicken breasts on a shallow plate. Sprinkle cumin and garlic powder on both sides of the chicken. Squeeze lime juice and olive oil over the chicken and let set while you start your grill. Get your grill to a medium high heat. Be sure that your grates are clean! Take chicken and season with salt and pepper if you like. Place chicken skin side down over an area of even heat on your grill. Do not move chicken for at least 3-4 minutes. Turn chicken after 5 minutes and cook on other side. Place your favorite BBQ sauce in a small bowl and brush over the chicken. If you do not have a brush, use a soup spoon to spread the sauce evenly. Turn the chicken and lower the heat. Brush sauce over the other side and continue to cook until the sauce is set, but not burned. If you like more sauce, continue this process. Be sure that the chicken is at least at 165 degrees internal temperature. They will carry temperature and continue cooking when you remove them from the grill. Serve with your favorite salad, slaw or with grilled vegetables. |
