Burger stuffed sweet rolls Print E-mail
These rolls are wonderfully sweet and creamy- plain or
stuffed with hamburger filling.  They can be made and
slipped into a lunch bag as a snack for the kids.
They're best served freshly made.

- Justine (Wall, NJ) Yield: about 1 dozen large rolls

INGREDIENTS:

For the bread dough:
2 tbsp active dry yeast
1 cup warm water
1 cup warm milk
1/2 cup white sugar
pinch of salt
1/2 cup olive or canola oil
6 cups all purpose flour
1/2 cup plain bread crumbs

For the hamburger filling:
1/2 lb lean ground beef
salt and pepper

PROCEDURE:
1.  In a large bowl, mix water and milk.  Dissolve two
tablespoons of active dry yeast and let stand for
10-15 minutes or until bubbles are seen forming in the
liquid.
2. Add the sugar, salt and oil. Mix until blended. Add
the flour gradually, cup by cup, until well
incorporated.
3. Place dough on a floured surface and knead for
10-15 minutes until the dough is elastic and sticky. 
4. Coat a large bowl with olive oil.  Place the
kneaded dough in the bowl and brush the top and sides
of the dough with oil.  Cover bowl with a damp cloth
or 3 layers of damp paper towel.  Let dough stand
untouched for 2 hours.  It should double in size.
5. Make the filling: brown the ground beef in a
skillet.  Season with salt and pepper. Allow to cool.
6. Punch the dough in the center once.  Place on the
floured surface and knead again for 2 minutes. Divide
into two, and form each piece into large logs. Cut
each log crosswise into 5-6 pieces. 
7. Flatten each piece in your hand to 1/8 inch
thickness.  Place a teaspoonfull of cooked ground beef
in the center and bring together the edges.  Pinch
together edges to seal well and form into a ball.
8. Preheat the oven to 350C. 
9. Roll each dough ball in plain breadcrumbs until
lightly coated and place 1 inch apart on an ungreased
baking sheet sprinkled with breadcrumbs.  Let stand to
rise for another 20 minutes. 
10. Bake for 20 minutes or until the tops of each roll
are light golden brown.
11. Cool for at least 5 minutes before eating.
Filling may be extremely hot so eat with caution if
not cooled completely.

NOTE: You may opt to prepare sweet rolls with no
filling by omitting steps 5 and 7.  Also, try making
different fillings to stuff each roll with (tuna,
chicken, meatloaf).
