Lamb Shish Kebab and Marinade |

A great main dish that is easy to prepare and can be cooked inside or on the grill on a nice day. Perfect for Spring or Summer entertaining.
Ingredients5 lb. leg of lamb (or 2 lbs of boneless lamb for 4)3 large onions, sliced3 cloves garlic, crushed with 3 tsp. salt1/3 c. red wine1/3 c. tarragon wine vinegar1/3 c. Kikkoman soy sauce1/2 tsp. pepper2 tsp. Paprika2 tsp. Dried mustardCut lamb into small, uniform cubes. Arrange meat and onions in shallow pan. Mix remaining ingredients, pour over meat. Cover and refrigerate overnight. Place lamb on skewers, broil 15-20 min. or grill for 10-15 minutes, turning frequently. Do not discard the marinade. On the stove, heat onions and marinade to a complete boil, reduce heat, cook for 10-15 min. and allow it to reduce. Spoon reduction on the meat. Great dish with the polenta recipe above.
